Ingredients

  • 800g chicken thighs, cut into chunks
  • ¾ cup smooth peanut butter
  • 400ml coconut milk
  • 3 tablespoons soy sauce
  • 2 tablespoons sweet chilli sauce
  • 1 tablespoon fresh ginger, grated
  • 3 garlic cloves, minced
  • 1 tablespoon lime juice
  • 1 teaspoon turmeric
  • Salt, to taste

Instructions

  1. Add the peanut butter, coconut milk, soy sauce, sweet chilli sauce, grated ginger, minced garlic, lime juice, and turmeric directly into the slow cooker.
  2. Whisk everything together until the sauce is smooth and well combined.
  3. Add the chicken chunks and stir until fully coated in the satay sauce.
  4. Cover and cook on LOW for 8 hours or HIGH for 4 hours, until the chicken is tender and cooked through.
  5. Stir well to thicken and blend the sauce.
  6. Taste and season with salt if needed.
  7. Serve hot over steamed jasmine rice.
  8. Finish with a squeeze of fresh lime juice for extra brightness.
