Ingredients

  • 600g chicken thighs, bone-in
  • 2 carrots, sliced
  • 2 celery stalks, chopped
  • 1 brown onion, diced
  • 3 garlic cloves, minced
  • 1 litre chicken stock
  • 1 teaspoon dried thyme
  • Salt and pepper, to taste
  • Fresh flat-leaf parsley, chopped, for serving

Instructions

  1. Place the chicken thighs into the slow cooker.
  2. Add the sliced carrots, chopped celery, diced onion, and minced garlic.
  3. Pour in the chicken stock.
  4. Sprinkle over the dried thyme.
  5. Season lightly with salt and pepper.
  6. Stir gently to combine.
  7. Cover with the lid and cook on LOW for 7 to 8 hours.
  8. Once the chicken is fully cooked and tender, carefully remove it from the slow cooker.
  9. Discard the bones and shred the meat using two forks.
  10. Return the shredded chicken to the soup.
  11. Stir well and taste for seasoning.
  12. Add additional salt and pepper if needed.
